What is dehydrated young jackfruit?

Young jackfruit (Artocarpus heterophyllus), polos in Sinhala, is jackfruit picked green, before it ripens. Its firm, pale, fibrous flesh has a mild flavour and is cooked as a vegetable in Sri Lanka, in dishes such as polos curry.

Dried, young green jackfruit keeps for transport and storage. Food processors use it in ready meals, curry mixes and plant-based foods, where its stringy texture stands in for meat.

Harvest Gate is an agricultural exporter based in Colombo, Sri Lanka. It quotes dehydrated young jackfruit per consignment, alongside the other dehydrated vegetables in its dehydrated range. The guide to dehydrated and freeze dried produce explains how the two differ.
