What is dehydrated jackfruit?

Jackfruit (Artocarpus heterophyllus), kos in Sinhala, grows across Sri Lanka. Its ripe fruit holds sweet, yellow bulbs with a fragrant, tropical flavour.

Dried, the bulbs become chewy golden pieces that keep that flavour. Food processors use dried jackfruit in snack packs, trail mixes, breakfast cereals, bakery and confectionery. Importers sell it on to grocers.

Harvest Gate is an agricultural exporter based in Colombo, Sri Lanka. It quotes dehydrated jackfruit per consignment, alongside the other dehydrated fruits in its dehydrated range. The guide to dehydrated and freeze dried fruit explains how the two differ, and young green jackfruit is on its own page as dehydrated young jackfruit.
